Homemade Chicken Soup.



I am Beautiful.


So. I've been put on a diet and this is the soup thats on it. Its REALLY delicious.  For the time it took me to make it I ate it faster than anything.


What You Need:

 * I'm not putting measurements on this, if you favor something add more of it.

I used about a 1/2 a cup of veggies all together.

Yields about 4-5 bowls from what I made.

Baked Chicken Breast  (Boneless, skinless works best)


Green Pepper


Onion


Baby Carrots


Celery 


Hot Sauce


Dried Onion Soup Mix (Lipton, etc)


4 Cups of Water


How to Make Me:


Bake your chicken until no longer raw (no longer pink in the center).   Once that is cooked, let it get  to where its no longer hot and easy to handle. ( I threw mine in foil and in the freezer while I chopped my veggies)

Dice all your veggies into small bite sized cubes.
All for you.

Dice  HALF the chicken breast into small bite sized pieces. I removed the skin.

Add the veggies and the chicken to the sauce pan, add 4 cups of water and the soup mix.  Bring to a boil over high heat. Add a few drops of hot sauce once it is boiling. (Optional I added about a 1/2 a teaspoon)

Once the soup is boiling, bring it back to  simmer and cover the pan with a lid.  I let mine sit  for about 10-15 minutes.  I like my veggies to have a light crunch to them and this was perfect on my stove.  Do a taste test after about 5 minutes to find your desired crunch. 

Pour in a bowl, flip on a movie and enjoy.   I even added a small handful of mozzarella.
Mmmm. I am so yum.



Cream Cheese and Guava Pastries

These are sooo good.  My father said his mom used to make them and I figured I'd take a jab at them. Daughter for the win!!


What You Need:

Any kind of pastry dough (i.e croissants, pie dough, etc)


Guava Spread (you can get this in the ethic section at the grocery store, or a Spanish market.)

Cream Cheese


How to Make Me:

Preheat your oven to 300. Line a pan with foil and grease the bottom with butter or margarine.

I'm Cold!
Roll out your croissants (what I used)  on a separate dish.  Using a silver knife(butter knife works best),  spread the cheese and the guava on the dough, alternating cheese, guava, cheese. etc.

Roll them up like you would a normal croissant.  Place them on your buttered pan.  Let them bake 15 to 20 minutes or until dough is a golden brown.
